Shrimp Tempura







Tempura is a cuisine of Portuguese origin with much popularity in Japan. Thin strips of vegetables or sea foods like shrimp or squid are fried in the tempura batter.

ingredients for the tempura batter

Flour – 8 - 10 tbsp
Ice water – as required
Salt – ¼ tsp
Sugar – 1 pinch
Oil – to deep fry

Shrimp – 10 - 20
Clean and de-vein the shrimps and let the tail remain. Poke the sides of the shrimp with a sharp knife.

Place the flour in a bowl. Gradually add the ice water until a thick batter is formed with lots of lumps. (For better results, place the bowl on ice water).

Heat oil in a pan. Dip the shrimp in the tempura batter and fry 2 minutes on each side. Serve with tomato sauce.

The excess batter was used to fry few capsicum rings and carrot julians.
